Ditch the Dairy with this Cashew Sour Cream

If you’ve been looking for a dairy-free alternative to sour cream, try this cashew sour cream recipe.

Lemon is a refreshing source of Vitamin C and phytochemicals called limonoids, which have been shown to help fight cancers of the mouth, skin, lung, breast, stomach and colon.

 

Here’s the recipe:

Cashew Sour Cream

Ingredients:

1 cup cashews, soaked overnight in filtered water

2 tsp. apple cider vinegar

1 Tbsp. lemon juice

1/4 cup water

1/4 tsp salt

 

Instructions:

Place all ingredients in a blender (a bullet blender works well) and blend until smooth and creamy, about 30 seconds.

Cover and refrigerate. Should last up to 5 days.

*If you’d like to thin the sour cream out to a dressing, continue adding 1 additional tablespoon of water at a time until desired consistency is reached.
