Being a âhealth nutâ and plant based eater, Iâm always on the look out for healthy snacks that I can both sit and savor or grab when Iâm on the go. So, in the spirit of me wanting something sweet, hereâs a fun and âhealthy cookieâ recipe I want to share with you!Â You wonât find any yucky fake sweeteners in this recipe, nor will you find eggs or dairy!
In these cookies, the avocado replaces the butter- and I promise itâs so smooth and creamy and you wonât ever notice.
Avocados are full of healthy fats, vitamins and minerals. Yes they have fat but itâs good for you fat so donât be afraid to eat one when you want one (all things in moderation though). They are also commonly used to lower cholesterol and to treat osteoarthritis. They have also been proven to help in the fight against cancer (check out an article here).
Sweetened with honey, instead of refined white sugar, and using no white flour, you wonât feel bad if you eat a couple of these. They are tasty, chewy and super chocolaty. Go and make them now- youâll thank me later!
2 ounces raw organic unsweetened chocolate melted in 1/2 tablespoon of coconut oil
1/2 organic avocado
2 tablespoons of unsalted organic almond butter
1/4 cup honey
1/3 cup applesauce
2 tablespoons organic cocoa powder
1 1/2 tablespoons organic almond flour
optional stevia instead of honey
- Preheat oven to 350 degrees.
- Puree avocado in a food processor or high-speed blender until very smooth.
- Add other ingredients, one at a time and pulse until the batter is smooth.
- Chill the batter in the fridge for one hour.
- Fill a pastry bag and pipe batter onto cookie sheet, or drop the batter by heaping tablespoons.
- Bake for 15-17 minutes.
- Let cool for 5 minutes.
And thatâs it! Simple and delicious! Enjoy health nuts!!
