It comes together fast, and you can easily make a big batch for a party, or simply, to eat throughout the week. Pour it into pint size mason jars for a quick grab and go lunch option throughout the week.<\/p>\n<p><b>Benefits:<\/b><span id=\"ezoic-pub-ad-placeholder-153\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"153\" data-ez-position-type=\"under_second_paragraph\"><\/span><\/p>\n<p><b>Watermelon\u00a0<\/b>is 92% water, making it a delicious way to hydrate. It\u2019s an excellent source of \u00a0the antioxidant lycopene, which provides your skin some protection against the sun when eaten regularly. It\u2019s also a good source of Vitamins C and Vitamin A.<\/p>\n<p><b>Cucumber<\/b>\u00a0contains a variety of antioxidants and minerals, and helps reduce inflammation. It also contains fisetin, an antioxidant that can improve memory and protect brain cells from age-related decline.<span id=\"ezoic-pub-ad-placeholder-115\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"115\" data-ez-position-type=\"mid_content\"><\/span><span id=\"ezoic-pub-ad-placeholder-141\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"141\" data-ez-position-type=\"mid_content\"><\/span><\/p>\n<p><b>Chile Peppers\u00a0<\/b>contain\u00a0<i>capsaicin<\/i>, a compound that has been found to support the metabolism, aid in fat burn, and even protect against certain cancers.<\/p>\n<p>Here\u2019s the recipe:<span id=\"ezoic-pub-ad-placeholder-118\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"118\" data-ez-position-type=\"long_content\"><\/span><span id=\"ezoic-pub-ad-placeholder-130\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"130\" data-ez-position-type=\"long_content\"><\/span><\/p>\n<p><b>Watermelon Gazpacho<\/b><span id=\"ezoic-pub-ad-placeholder-117\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"117\" data-ez-position-type=\"long_content\"><\/span><\/p>\n<p><i>Ingredients:<\/i><\/p>\n<p>GAZPACHO<span id=\"ezoic-pub-ad-placeholder-107\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"107\" data-ez-position-type=\"longest_content\"><\/span><span id=\"ezoic-pub-ad-placeholder-119\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"119\" data-ez-position-type=\"longer_content\"><\/span><span id=\"ezoic-pub-ad-placeholder-120\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"120\" data-ez-position-type=\"longer_content\"><\/span><span id=\"ezoic-pub-ad-placeholder-129\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"129\" data-ez-position-type=\"longest_content\"><\/span><\/p>\n<p>6 cups watermelon, cubed<\/p>\n<p>1 cucumber, peeled, seeded, and diced<span id=\"ezoic-pub-ad-placeholder-145\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"145\" data-ez-position-type=\"bottom_of_page\"><\/span><span id=\"ezoic-pub-ad-placeholder-155\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"155\" data-ez-position-type=\"bottom_of_page\"><\/span><\/p>\n<p>2 tomatoes, seeded and diced<\/p>\n<p>1 red chile pepper (fresno chile), seeded<span id=\"ezoic-pub-ad-placeholder-152\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"152\" data-ez-position-type=\"bottom_of_page\"><\/span><\/p>\n<p>1 clove garlic, crushed<\/p>\n<p>2 tsp fresh lime juice<\/p>\n<p>salt and black pepper to taste<span id=\"ezoic-pub-ad-placeholder-147\" class=\"ezoic-adpicker-ad\" data-ezadpicker=\"147\" data-ez-position-type=\"bottom_of_page\"><\/span><\/p>\n<p>MINT OIL<\/p>\n<p>1\/4 cup mint<\/p>\n<p>1\/4 cup olive oil<\/p>\n<p>&nbsp;<\/p>\n<p><i>Instructions:<\/i><\/p>\n<p>Place watermelon, 1 1\/2 cups cucumber (reserve rest for garnish), tomatoes, red chili pepper, garlic and lime juice in a Vitamix or high speed blender. Blend on medium until all ingredients are fully incorporated.<\/p>\n<p>Taste, and add more lime juice 1 tsp at a time if needed to balance the flavor if your watermelon is very sweet.
