Make sure you get small, thin carrots so that they bake evenly. Slice each carrot into two equal halves, lengthwise.<\/p>\n<p>Brush with oil and lay out on a baking sheet. Sprinkle lightly with salt.<\/p>\n<p>Bake for appx. 25-30 minutes. (more for thicker carrots, less for thinner ones).<\/p>\n<p>Optional: Meanwhile, in a small bowl, mix fresh parsley and oil.
